Are you an adventurer in search of new gustatory challenges? The tumultuous bubbling of the Effervescence au Palais will satisfy your taste buds' curiosity. Between agitation and lively emotion, you will enjoy its communicative energy.

This sparkling wine in every sense of the word surprises, seduces and dazzles with every sip. With spirit and without artifice, we have married Auxerrois, Grüner Veltliner and Pinot Noir to offer you a terribly biting tasting.

This mischievous effervescence was born from a journey from Alsace to Austria. The Auxerrois, a native of Lorraine, gives it all its finesse and its subtle balance between roundness and acidity. The Grüner Veltliner, an emblematic Austrian grape variety, makes it soar thanks to its lightness and suppleness. As for the Pinot Noir, it gives it power and body. A meticulous composition whose harmony you will savour.

In order to preserve them as well as possible, the grapes are harvested by hand before being pressed in whole bunches in our cellars. We then obtain a faithful expression of the wine through vinification in stainless steel vats. The wine is matured in the same vats, except for 10% which are aged for 6 months in barrels. And to obtain these elegant bubbles, we logically chose the traditional method with a second fermentation in the bottle from Champagne. We also worked without dosage and without sulphite. The result is a piercing brut nature which was bottled on 26 April 2021 and disgorged on 18 July 2022.

The effervescence on the 2020 palate is impetuous throughout the tasting. Its pale yellow colour with green highlights gives way to a petulant, almost frenetic bouquet, oscillating between exotic fruits, white flowers, sweet spices and citrus. Extraordinarily refreshing! A cuvée of character, astonishing on the nose as well as on the palate, to which the Pinot Noir brings a beautiful substance, and the other grape varieties a liveliness that puts the taste buds on the alert.

To do it justice, serve it within two years. You can then enjoy it as an aperitif, on its own, or play with surprising and explosive combinations. Seafood such as oysters are an ideal ally and, for the more daring, try a lightly matured goat's cheese.
