The pine nut is the fruit of the pine cone. Ideal with basil for making pesto, it can also be used in many other recipes. It is an excellent source of vegetable protein, as well as minerals and trace elements (phosphorus, magnesium, zinc, manganese and copper) and vitamins (E and K). Use in sweet or savoury salads, pan-fried to accompany rice/couscous. Crushed with garlic and basil, they make up pistou or pesto. Used in desserts or creams, or to garnish sauces, as a side dish, in stuffing. They can be served mixed with strawberries!
