The recipe for pasteli is based on two pillars of Greek gastronomy since ancient times: honey and sesame. They are also both ingredients with high energy and nutritional value. The manufacture of pasteli does not require any technological prowess, but a very safe hand to mix sesame seeds with honey boiling on cold marble, to obtain the good crunch and the right taste of caramel. There are several types of pasteli, from crunchy to supple (melato). We selected a tragano, rich in sesame and very crunchy.
