One pumpkin, a thousand zero-zaste ideas

One pumpkin, a thousand zero-waste ideas

Every autumn, pumpkins take over our kitchens — hokkaido, butternut, spaghetti, or musquée. They bring warmth to our plates but too often end up half-eaten or in the bin. At Nowa Market, we’re showing you how to turn a single pumpkin into three delicious zero-waste recipes 💚

🥣 The flesh – cozy pumpkin soup
For 4 servings: 1 kg pumpkin (cubed), 1 onion, 2 garlic cloves, 1 L vegetable broth, 2 tbsp olive oil, a pinch of nutmeg, salt, and pepper. Sauté onion and garlic, add the pumpkin and broth, and simmer for 25 minutes. Blend, season, and add a splash of cream or oat milk for an extra smooth soup. 💡 Zero-waste tip: keep the peels for the next recipe!

🍟 The skin – crunchy chips
Wash the peels well, toss with a tablespoon of olive oil, salt, paprika, and herbs. Spread on a tray and bake for 10–15 minutes at 180°C until golden and crisp. Perfect guilt-free chips for a cozy autumn snack.

🌰 The seeds – protein-packed snack
Rinse and dry the seeds, boil them for 10 minutes in salted water, drain, then toss with a teaspoon of olive oil and your favorite spices (paprika, curry, or cumin). Roast for 20–25 minutes at 160°C, stirring halfway through. Crunchy, fiber-rich, and full of energy — store them in a jar for snacking anytime.

🍁 Nothing wasted, everything transformed
Leftover purée? Add it to pancakes, risotto, or a soft cake. Dried stem? It makes a beautiful natural decoration. A pumpkin is more than just an autumn vegetable — it’s a small lesson in circular cooking.

💚 At Nowa Market, we love simple, local, sensible recipes that make sustainability tasty. And you — how do you cook your pumpkin without wasting a thing?
