At Nowa Market, one of our favorite go-to dishes is our red bean and seasonal vegetable risotto. It’s easy to make, delicious, and entirely zero waste, making it a great option for a sustainable and balanced meal.
✔ 80g Arborio risotto rice
✔ 100g seasonal vegetables (carrots, onion, mushrooms, parsnip)
✔ 75g red beans
✔ 1 tbsp Rapunzel vegetable broth
✔ A few fresh aromatic herb leaves
✔ Spices of your choice
1️⃣ Boil twice the amount of water as your rice quantity, adding the vegetable broth.
2️⃣ Once the water is boiling, add the rice and let it cook for 13 minutes.
3️⃣ Meanwhile, dice your vegetables and sauté them in a pan with a bit of olive oil.
4️⃣ Add the red beans and cook until they become soft and tender.
5️⃣ Once the rice is cooked, mix it with the vegetables and let it simmer for a few minutes.
